Italian sausage stew recipe


125ml olive oil
2 cloves garlic finely chopped
1 chopped red onion
1 tea spoon of crushed chilli
Sprig of thyme chopped
3 fresh Italian pork sausages sliced.
Glass of red wine
2 tins of chopped tomatoes
120g of borlotti beans
120g of cannellini beans
1 table spoon of mascarpone.
Salt & pepper to season


In a pot gently sweat the garlic, red onion & thyme with the olive oil for 4 or 5 minutes.
Add the chopped Italian sausages and gently sweat until sealed.
Pour in the red wine and allow the alcohol to cook out. Approx 3/4 mins.
Add the tomatoes and allow to gently simmer for 30 to 35 minutes.
Add the borlotti & cannellini beans to the stew and bring back to a simmer.
Taste the stew for seasoning and add salt & pepper to taste.
Job done!
To serve: ladle into small soup bowls and garnish with a spoon of mascarpone cheese on top with a basil leaf & a little drizzle of olive.
Great with a few slices of garlic bread.
