Linguine Gamberoni e Rucola
320g/350g of linguine pasta
200g cherry tomatoes halved
150g fresh rocket
200ml white wine
36 large uncooked tiger prawns
3 cloves garlic chopped
1 large fresh chilli chopped
1 tsp of powdered fish stock
Good glug of olive oil
50g salted butter
Salt & pepper
In a pan heat the olive oil gently then add the chopped garlic & chilli & sweat for a few minutes
Add the tiger prawns and gently cook for 2-3 minutes
Sprinkle in the fish stock powder evenly & cook for 1 minute more
Add the cherry tomatoes, the white wine & butter
Let the wine reduce by 1/4
Follow the instructions for cooking the linguine.
Once drained add the pasta & the fresh rocket to the pan with the prawns & mix well season with salt & pepper to taste.
Divide the linguine gamberoni between 4 plates & drizzle a little olive oil on top.
Serve & enjoy!
